Almond Joy Pie Recipe
Our french coconut pie topped with toasted almonds and chocolate ganache

  1. 6 tablespoons (3oz) butter, melted
  2. 3 eggs, beaten
  3. 1.5 tablespoon all-purpose flour
  4. 1 cup sugar
  5. 1 1/3c shredded sweetened coconut
  6. 1 1/3 cup half and half
  7. 1 teaspoon vanilla
  8. Pinch of salt
  9. 3/4 cup toasted Almonds
  10. 4oz semi-sweet Chocolate chips
  11. 2oz Half and Half
  12. 1oz Butter (softened)
  1. Blind bake pie dough (see our blind baking post)
  2. Preheat oven to 350°
  3. Whisk eggs and sugar, mix in remaining ingredients
  4. Pour pie mixture into prepared pie tin
  5. Cover pie with foil & bake for 25 minutes.
  6. Remove foil & bake for an additional 20-25 minutes until center is set, but not puffy
To make the ganache
  1. Heat half and half in microwave until hot, being careful not to boil - about 45-60 seconds
  2. Pour hot half and half over chocolate chips and mix until melted
  3. Stir in softened butter
  4. Top cooled pie with toasted almonds, then spread ganache on top
