French Coconut Pie
This pie is a staff favorite at Avenue Eatz. Sweet, chewy with a rich custard base.

  1. 6 tablespoons (3oz) butter, melted
  2. 3 eggs, beaten
  3. 1.5 tablespoon all-purpose flour
  4. 1 cup sugar
  5. 1 1/3c shredded sweetened coconut
  6. 1 1/3 cup half and half
  7. 1 teaspoon vanilla
  8. Pinch of salt
  1. Blind bake pie dough (see our blind baking post)
  2. Preheat oven to 350°
  3. Whisk eggs and sugar, mix in remaining ingredients
  4. Pour pie mixture into prepared pie tin
  5. Cover pie with foil & bake for 25 minutes.
  6. Remove foil & bake for an additional 20-25 minutes until center is set, but not puffy
  7. Top with homemade whipped cream and toasted coconut
