Peach Pie Recipe
There's nothing quite like a fresh peach pie.

  1. 3 pounds freestone peaches, peeled and sliced
  2. 1 cup white sugar, divided
  3. 1 pinch salt
  4. 1/4 cup all-purpose flour
  5. 1 tablespoon tapioca
  6. 1 teaspoon lemon juice
  7. 1/4 teaspoons ground cinnamon
  1. Roll out pie dough & refrigerate until ready to use
  2. Preheat oven to 400 degrees
  3. Combine all ingredients in a bowl and let sit for 15 minutes
  4. Drain the juices from the filling
  5. Pour filling into pie crust & top with remaining dough
  6. Beat egg white with a pinch of salt until frothy to create an egg wash
  7. Brush top pie dough with egg wash, sprinkle lightly with sugar, then again with turbinado sugar (optional)
  8. Cut a hole in the top of the pie to vent
  9. Bake 45-60 minutes until top crust is browned and juices are thick & bubbly
